Ingredients (Serves: 2)
- Potatoes500 g
- Eggs220 g
- Baby spinach80 g
- Olive oil12 g
- Sweet paprika (optional)2 g
Method
Wash the potato, halve it lengthwise, prick the cut sides with a fork, brush with the olive oil and sprinkle with salt. A sweet potato works the same way.
Place the halves cut side up in the air fryer basket and cook at 200 °C for 22 minutes until almost tender.
Scoop out a little of the flesh from the middle of each half to make a hollow, keeping a rim, and line each hollow with half of the spinach.
Crack one egg into each hollow, season with salt and pepper and cook in the air fryer at 180 °C for 8 minutes for a runny yolk, or 10 minutes for a firm one.
Sprinkle with the paprika (if using) and serve hot.
