Ingredients (Serves: 2)

  • Sea bass fillets360 g
  • Potatoes240 g
  • Iceberg lettuce100 g
  • Cherry tomatoes120 g
  • Olive oil24 g
  • Garlic8 g
  • Lemon60 g
  • Fresh parsley (optional)8 g

Method

  1. Wash the small potatoes and cut them in half. Put them in a pot of salted water, bring to the boil and cook for 15 minutes until tender, then drain.

  2. Pat the sea bass fillets dry and season with salt. Heat a splash of the oil in a large pan over medium-high heat.

  3. Lay the fillets skin-side down, open flat like a butterflied fish, and press gently. Cook for 4 minutes without moving them until the skin is crisp, then turn and cook for 2 minutes more.

  4. Lift the fish out and, in the same pan, fry the sliced garlic and the potatoes in the rest of the oil for 3 minutes, until golden. Add a squeeze of lemon.

  5. Serve the fish with the potatoes and a side salad of lettuce and cherry tomatoes, with chopped parsley on top if using.
