Ingredients (Serves: 2)

  • Cod loin360 g
  • Crushed tomatoes (can)400 g
  • Pitted black olives40 g
  • Capers16 g
  • Garlic10 g
  • Olive oil20 g
  • Dry white wine60 g
  • Fresh parsley6 g
  • Dried chili (optional)1 g
  • Ciabatta rolls (optional)80 g

Method

  1. Cut the cod into 4 or 5 large chunks and pat dry. Slice the garlic thinly.

  2. Warm the olive oil in a wide pan over medium heat with the garlic and the dried chili, if using, for 1 minute without browning the garlic.

  3. Add the crushed tomatoes and the white wine and simmer for 8 minutes until the sauce thickens slightly.

  4. Stir in the olives and capers and season with a little pepper (the capers are already salty).

  5. Nestle the cod chunks into the sauce, spoon some over the top, cover and simmer gently for 8 minutes until the fish is opaque and flakes easily.

  6. Sprinkle with the chopped parsley.

  7. Serve straight away with a slice of toasted ciabatta, if using, to mop up the sauce.
