Ingredients (Serves: 2)

  • Rice paper sheets48 g
  • Chicken breast200 g
  • Rice noodles (dry)50 g
  • Green cabbage80 g
  • Carrots80 g
  • Spring onion (scallion)30 g
  • Garlic6 g
  • Soy sauce20 g
  • Toasted sesame oil8 g
  • Olive oil12 g

Method

  1. Soak or boil the rice noodles in a pot for 3 minutes, drain and snip them into short lengths with scissors.

  2. Heat the sesame oil in a pan and stir-fry the thin chicken strips with the garlic for 5 minutes. Add the shredded cabbage, grated carrot and sliced spring onion and cook for 3 minutes.

  3. Stir in the soy sauce and the noodles, then let the filling cool for 5 minutes so it does not tear the rice paper.

  4. Dip one rice paper sheet in warm water for about 10 seconds until pliable. Put 2 tablespoons of filling near the lower edge, fold in the sides and roll up tightly. Repeat, then brush the rolls with the olive oil.

  5. Cook in the air fryer at 190 °C for 10 minutes, turning them halfway, until golden and crunchy. Serve hot.
