Ingredients (Serves: 2)
- Chickpeas (can, drained)300 g
- Baby spinach120 g
- Onion140 g
- Curry powder10 g
- Olive oil30 g
- Eggs (optional)110 g
- White rice (optional)140 g
Method
If using the rice, rinse it and boil it in twice its volume of salted water, covered, for 18 minutes.
If using the egg, boil it in a small pot for 10 minutes, then cool under cold water, peel and halve it.
Heat the olive oil in a pan and fry the chopped onion for 8 minutes until golden.
Add the curry powder and stir for 1 minute.
Add the drained chickpeas with a splash of water and cook for 5 minutes. Season.
Turn off the heat and stir in the spinach only now, for 1 minute, so it just wilts and stays fresh.
Serve the chickpeas with the hard-boiled egg and the white rice.
